Bruschetta al pomodoro

A very easy recipe that needs absolutely a top quality extra virgin olive oil, “pane Pugliese”, and tomatoes.

For a tomato bruschetta you’ll need:
1 Bread loaf
Fresh tomatoes
Extra virgin olive oil
A head of garlic
Basil leaves
Salt for seasoning

Wash and dry the tomatoes. Cut them in half, scoop out the seeds and juice. Cut each tomato half into narrow strips and then dice the strips.

Cut a clove of garlic in half and rub the cut side all over the inside of a large bowl in which you’ll put the diced tomato.
Add 5 or 6 basil leaves into the large bowl.
Add a splash of olive oil.
Season with salt according to taste.
Stir so that all the ingredients and flavours mix together.

Grill the slice of bread on both sides.
Rub a clove of garlic on the crusty surface of the slice of bread.
Add some olive oil over the slices.
Top the bruschetta with the flavoured diced tomato.
