Carrots plum cake

 

20140323_111724250 gr of grated carrots
120 gr of rice malt
120 gr of corn oil
200 gr flour
1 egg
1 packet of baking powder
1 vanilla bean
Preheat oven at 170°C.

Whisk  rice malt and the egg and then add the carrots,  oil,  flour,  baking powder and vanilla. Pour into a plum cake pan and bake for circa 1 hour.
If you want you can serve it with an icing cream made of

  • 250g spreadable cream cheese
  • 1/2 cup (80g) icing sugar
  • 1/2 teaspoon vanilla essence
